- Mushrooms (sliced) - 200 grams
- Shredded mozzarella cheese - 100 grams
- Tortillas (8-inch) - 4 pieces
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Onion (finely chopped) - 1 small
- Cumin powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro (chopped) - 2 tablespoons
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened, about 3 minutes.
- Add the sliced mushrooms to the skillet, along with cumin, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and tender.
- Remove the skillet from heat and stir in chopped cilantro. Set the mushroom mixture aside.
- In the same skillet, add the remaining tablespoon of olive oil and heat over medium heat. Place one tortilla in the skillet and sprinkle half of the shredded mozzarella cheese on one half of the tortilla.
- Add half of the mushroom mixture over the cheese and fold the tortilla in half. Cook for 2-3 minutes on each side, until golden and the cheese is melted. Repeat with the second tortilla.
- Remove the quesadillas from the skillet, cut into wedges, and serve warm.
