Ingredients

  • Brown lentils - 100 grams
  • Mushrooms (button or cremini) - 150 grams, finely chopped
  • Oats (rolled) - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Ground flaxseed - 1 tablespoon
  • Water - 3 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 small, sliced
  • Avocado - 1/2, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Rinse the lentils under cold water and cook them in a pot of boiling water for about 20-25 minutes, or until tender. Drain and set aside.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing for 3-4 minutes until softened.
  3. Add the finely chopped mushrooms to the skillet and cook for an additional 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.
  4. In a mixing bowl, combine the cooked lentils, sautéed mushroom mixture, oats, soy sauce, ground flaxseed, water, salt, black pepper, and paprika. Mix well until fully combined.
  5. Using your hands, form the mixture into two patties, ensuring they are compact.
  6. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
  7. To assemble the burgers, place each patty on a bun, topped with lettuce, tomato slices, avocado, and a dollop of vegan mayonnaise. Serve immediately.
