- Brown lentils - 100 grams
- Mushrooms (button or cremini) - 150 grams, finely chopped
- Oats (rolled) - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Olive oil - 2 tablespoons
- Ground flaxseed - 1 tablespoon
- Water - 3 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon

- Lettuce - 2 leaves
- Tomato - 1 small, sliced
- Avocado - 1/2, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- Rinse the lentils under cold water and cook them in a pot of boiling water for about 20-25 minutes, or until tender. Drain and set aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing for 3-4 minutes until softened.
- Add the finely chopped mushrooms to the skillet and cook for an additional 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.
- In a mixing bowl, combine the cooked lentils, sautéed mushroom mixture, oats, soy sauce, ground flaxseed, water, salt, black pepper, and paprika. Mix well until fully combined.
- Using your hands, form the mixture into two patties, ensuring they are compact.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
- To assemble the burgers, place each patty on a bun, topped with lettuce, tomato slices, avocado, and a dollop of vegan mayonnaise. Serve immediately.
