  • Ginger (grated) - 1 inch piece
  • Green chili (sliced) - 1 small
  • Tomato (chopped) - 1 medium
  • Biryani spice mix - 1 tablespoon
  • Cilantro (chopped) - 2 tablespoons
  • Mint leaves (chopped) - 2 tablespoons
  • Vegetable broth - 2 cups
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Yogurt (optional, for serving) - 100 grams

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain before using.
  2. In a large pot or deep skillet, heat the cooking oil over medium heat. Add the sliced onions and sauté until golden brown.
  3. Add the minced garlic, grated ginger, and sliced green chili. Cook for an additional 2 minutes until fragrant.
  4. Stir in the sliced mushrooms and cook for about 5-7 minutes until they start to soften.
  5. Add the chopped tomato and biryani spice mix to the pot, stirring well to combine. Cook for another 3-4 minutes until the tomatoes soften.
  6. Add the soaked and drained basmati rice to the pot, followed by the vegetable broth. Stir gently to combine all ingredients.
  7. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  8. Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
  9. Fluff the biryani with a fork, then mix in the chopped cilantro, mint leaves, and lemon juice. Adjust salt to taste.
