- Tomato (chopped) - 1 medium
- Biryani spice mix - 1 tablespoon
- Cilantro (chopped) - 2 tablespoons
- Mint leaves (chopped) - 2 tablespoons
- Vegetable broth - 2 cups
- Cooking oil - 2 tablespoons
- Salt - to taste
- Lemon juice - 1 tablespoon
- Yogurt (optional, for serving) - 100 grams
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain before using.
- In a large pot or deep skillet, heat the cooking oil over medium heat. Add the sliced onions and sauté until golden brown.
- Add the minced garlic, grated ginger, and sliced green chili. Cook for an additional 2 minutes until fragrant.
- Stir in the sliced mushrooms and cook for about 5-7 minutes until they start to soften.
- Add the chopped tomato and biryani spice mix to the pot, stirring well to combine. Cook for another 3-4 minutes until the tomatoes soften.
- Add the soaked and drained basmati rice to the pot, followed by the vegetable broth. Stir gently to combine all ingredients.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the biryani with a fork, then mix in the chopped cilantro, mint leaves, and lemon juice. Adjust salt to taste.
- Serve the mushroom biryani in bowls, topped with a dollop of yogurt if desired.
