  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • BBQ sauce - 1/2 cup
  • Whole wheat hamburger buns - 2
  • Coleslaw mix - 1 cup
  • Vegan mayonnaise - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Pickles - 4 slices

Steps

  1. Preheat your grill or a grill pan over medium heat.
  2. In a small bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper to create a marinade.
  3. Brush the marinade generously over both sides of the Portobello mushrooms.
  4. Grill the mushrooms for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  5. During the last few minutes of grilling, brush the BBQ sauce over the mushrooms to caramelize.
  6. While the mushrooms are grilling, in a separate bowl, combine the coleslaw mix, vegan mayonnaise, and lemon juice. Mix until well combined.
  7. Toast the whole wheat hamburger buns on the grill for 1-2 minutes until lightly browned.
