- Pearl barley - 1 cup (200g)
- Mushrooms (cremini or button) - 200g, sliced
- Vegetable broth - 4 cups (1 liter)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Parmesan cheese - 30g, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for about 7-8 minutes, stirring occasionally, until the mushrooms are softened and browned.
- Stir in the pearl barley and fresh thyme, cooking for an additional 2 minutes to toast the barley slightly.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the barley to absorb the broth before adding more. Continue this process for about 30 minutes, or until the barley is tender and creamy.
- Once the barley is cooked, stir in the grated Parmesan cheese and season with salt and black pepper to taste.
- Remove from heat and let it sit for a couple of minutes. Serve hot, garnished with fresh parsley.
