- Pearl barley - 1/2 cup

- Carrot - 1 medium, diced
- Vegetable broth - 2 cups
- Olive oil - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon

Steps
- Preheat the oven to 180°C (350°F).
- In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add the pearl barley, reduce the heat to low, cover, and simmer for about 30 minutes, or until the barley is tender.
- While the barley is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and diced carrot, and sauté for about 5 minutes until softened.
- Add the sliced mushrooms and minced garlic to the skillet. Cook for an additional 5-7 minutes, until the mushrooms are browned and any moisture has evaporated.
- Stir in the thyme, salt, and black pepper, and cook for another minute.
- Once the barley is cooked, combine it with the mushroom mixture in the skillet. Mix well to combine.
- Transfer the mixture to a small baking dish and sprinkle with nutritional yeast if using. Top with fresh parsley.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the top to crisp up slightly.
- Remove from the oven, let it cool for a few minutes, then serve warm.
