- Cauliflower rice - 200 grams
- Shredded mozzarella cheese - 150 grams
- Parmesan cheese - 30 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh spinach - 100 grams
- Mushrooms - 150 grams, sliced
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil leaves - for garnish
Steps
- Preheat your oven to 220°C (425°F).
- In a bowl, combine cauliflower rice, 100 grams of mozzarella cheese, Parmesan cheese, the egg, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes or until golden brown and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add sliced mushrooms and cook for 5-7 minutes until they release moisture and brown slightly.
- Stir in fresh spinach and Italian seasoning, cooking until the spinach wilts, about 2-3 minutes. Remove from heat.
- Once the crust is done, remove it from the oven and evenly distribute the mushroom and spinach mixture over the crust.
- Top with the remaining mozzarella cheese.
- Return the pizza to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly.
- Remove from the oven, let it cool slightly, garnish with fresh basil leaves, slice, and serve.
