Ingredients

  • Cauliflower rice - 200 grams
  • Shredded mozzarella cheese - 150 grams
  • Parmesan cheese - 30 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh spinach - 100 grams
  • Mushrooms - 150 grams, sliced
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a bowl, combine cauliflower rice, 100 grams of mozzarella cheese, Parmesan cheese, the egg, salt, and pepper. Mix until well combined.
  3. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza crust about 1/2 inch thick.
  4. Bake the crust in the preheated oven for 15-20 minutes or until golden brown and firm.
  5. While the crust is baking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  6. Add sliced mushrooms and cook for 5-7 minutes until they release moisture and brown slightly.
  7. Stir in fresh spinach and Italian seasoning, cooking until the spinach wilts, about 2-3 minutes. Remove from heat.
  8. Once the crust is done, remove it from the oven and evenly distribute the mushroom and spinach mixture over the crust.
  9. Top with the remaining mozzarella cheese.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly.
  11. Remove from the oven, let it cool slightly, garnish with fresh basil leaves, slice, and serve.
