  • Whole wheat flatbread - 2 pieces

  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Feta cheese (crumbled) - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are browned and tender.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt, black pepper, and red pepper flakes if using. Remove from heat.
  5. Place the flatbreads on a baking sheet. Brush each flatbread with the remaining tablespoon of olive oil.
