- Milk - 1 cup (240ml)
- Egg - 1 large
- Salt - 1/4 teaspoon
- Butter - 2 tablespoons (30g), melted
- Olive oil - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Mushrooms (button or cremini) - 200g, sliced
- Fresh spinach - 150g, roughly chopped
- Cream cheese - 100g, softened
- Black pepper - to taste
- Parmesan cheese - 30g, grated (optional)
- Fresh parsley - for garnish
Steps
- In a mixing bowl, whisk together the flour, milk, egg, and salt until smooth. Let the batter rest for 10 minutes.
- In a non-stick skillet over medium heat, add 1 tablespoon of melted butter. Pour in about 1/4 cup of crepe batter, swirling the pan to evenly coat the bottom.
- Cook the crepe for about 2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for another minute. Repeat with the remaining batter, stacking the cooked crepes on a plate.
- In the same skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add sliced mushrooms and cook for 5-7 minutes until they soften and release moisture. Stir in chopped spinach and cook until wilted, about 2 minutes.
- Reduce heat to low, add cream cheese, and mix until creamy and well combined. Season with black pepper to taste.
- To assemble, spoon a portion of the mushroom and spinach mixture onto one side of each crepe. Fold the crepe over and place on a plate.
- If desired, sprinkle grated Parmesan cheese on top and garnish with fresh parsley before serving.
