Ingredients

  • Mushrooms (shiitake or cremini) - 200 grams, sliced
  • Carrots - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Water - 4 cups (approximately 1 liter)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced carrots and celery to the pot, and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.
  4. Add the water, bay leaf, chopped thyme, and season with salt and black pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  6. After 15 minutes, add the chopped parsley and remove the bay leaf.
  7. Taste and adjust seasoning if necessary, then serve hot.
