Ingredients
- Basmati rice - 1 cup
- Green or brown lentils - 1/2 cup
- Onion - 2 medium, thinly sliced
- Olive oil - 3 tablespoons
- Cumin powder - 1 teaspoon
- Coriander powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth or water - 2 cups
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice and lentils under cold water until the water runs clear, then soak the lentils for 15 minutes.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they become deep golden brown and caramelized, about 15-20 minutes. Remove half of the onions and set aside for garnishing.
- Add the cumin and coriander powders to the remaining onions in the skillet and stir for 1 minute until fragrant.
- Add the soaked lentils to the skillet and stir to combine, then pour in the vegetable broth or water. Bring to a boil.
- Once boiling, reduce the heat to low, add the rinsed basmati rice, salt, and black pepper. Stir gently, cover, and let it simmer for 20 minutes or until the rice and lentils are cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork before serving.
- Serve the Mujadara Rice warm, garnished with the reserved caramelized onions and chopped parsley.
