Ingredients

  • Brown rice - 1 cup
  • Green lentils - 1/2 cup
  • Water - 3 cups
  • Onion - 1 large, sliced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the brown rice and green lentils under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed brown rice, lentils, and 3 cups of water. Add 1/2 teaspoon of salt and bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes, or until the rice and lentils are tender and the water is absorbed.
  4. While the rice and lentils are cooking, heat the olive oil in a skillet over medium heat. Add the sliced onions and sprinkle with a pinch of salt.
  5. Cook the onions, stirring frequently, until they are caramelized and golden brown, about 10-15 minutes.
  6. Once the rice and lentils are cooked, remove from heat and fluff with a fork. Stir in the cumin, black pepper, and remaining salt.
  7. To serve, spoon the Mujadara onto plates, top with caramelized onions, and garnish with fresh parsley.
