- Brown rice - 1 cup
- Green lentils - 1/2 cup
- Water - 3 cups
- Onion - 1 large, sliced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the brown rice and green lentils under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed brown rice, lentils, and 3 cups of water. Add 1/2 teaspoon of salt and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes, or until the rice and lentils are tender and the water is absorbed.
- While the rice and lentils are cooking, heat the olive oil in a skillet over medium heat. Add the sliced onions and sprinkle with a pinch of salt.
- Cook the onions, stirring frequently, until they are caramelized and golden brown, about 10-15 minutes.
- Once the rice and lentils are cooked, remove from heat and fluff with a fork. Stir in the cumin, black pepper, and remaining salt.
- To serve, spoon the Mujadara onto plates, top with caramelized onions, and garnish with fresh parsley.
