Ingredients

  • Lamb shoulder - 300 grams, diced
  • Couscous - 150 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Chicken or vegetable broth - 400 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and diced lamb to the pot. Brown the lamb on all sides, about 7-10 minutes.
  3. Stir in the diced carrot, zucchini, and chopped tomato. Cook for another 5 minutes until the vegetables start to soften.
  4. Add ground cumin, coriander, cinnamon, paprika, salt, and black pepper. Mix well to coat the lamb and vegetables with the spices.
  5. Pour in the chicken or vegetable broth and bring to a simmer. Cover and cook for 20 minutes until the lamb is tender.
  6. While the lamb is cooking, prepare the couscous according to package instructions, typically by adding it to boiling water or broth and letting it sit covered for 5 minutes.
  7. Fluff the couscous with a fork and divide it between two plates. Top with the lamb and vegetable mixture.
  8. Garnish with fresh chopped parsley before serving.
