Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Canned chickpeas - 200 grams, drained and rinsed
  • Dried apricots - 100 grams, chopped
  • Cinnamon - 1 teaspoon, ground
  • Cumin - 1 teaspoon, ground
  • Coriander - 1 teaspoon, ground
  • Turmeric - 1/2 teaspoon, ground
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml
  • Fresh cilantro - 2 tablespoons, chopped for garnish

Steps

  1. Heat the olive oil in a large skillet or tagine over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic, sliced carrot, and chopped red bell pepper. Cook for another 5 minutes until the vegetables start to soften.
  3. Stir in the chicken thighs, cooking for about 5 minutes until they are browned on all sides.
  4. Add the chickpeas, chopped dried apricots, cinnamon, cumin, coriander, turmeric, salt, and black pepper. Stir well to combine all the ingredients.
  5. Pour in the chicken broth, bringing the mixture to a gentle simmer. Cover and let it cook for about 25 minutes, or until the chicken is fully cooked and tender.
  6. Once done, taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
