- Chicken thighs - 400 grams, boneless and skinless
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, sliced
- Red bell pepper - 1 medium, chopped
- Canned chickpeas - 200 grams, drained and rinsed
- Dried apricots - 100 grams, chopped
- Cinnamon - 1 teaspoon, ground
- Cumin - 1 teaspoon, ground
- Coriander - 1 teaspoon, ground
- Turmeric - 1/2 teaspoon, ground
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 250 ml
- Fresh cilantro - 2 tablespoons, chopped for garnish
Steps
- Heat the olive oil in a large skillet or tagine over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic, sliced carrot, and chopped red bell pepper. Cook for another 5 minutes until the vegetables start to soften.
- Stir in the chicken thighs, cooking for about 5 minutes until they are browned on all sides.
- Add the chickpeas, chopped dried apricots, cinnamon, cumin, coriander, turmeric, salt, and black pepper. Stir well to combine all the ingredients.
- Pour in the chicken broth, bringing the mixture to a gentle simmer. Cover and let it cook for about 25 minutes, or until the chicken is fully cooked and tender.
- Once done, taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
