Ingredients

  • All-purpose flour - 120 grams
  • Baking soda - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Ground cloves - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Molasses - 80 grams
  • Brown sugar - 50 grams
  • Vegetable oil - 30 grams
  • Vanilla extract - 1 teaspoon
  • Water - 1 tablespoon

Steps

  1. Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, mix the molasses, brown sugar, vegetable oil, vanilla extract, and water until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Using a tablespoon, scoop out the dough and roll it into balls, then place them on the prepared baking sheet, spacing them about 5 cm apart.
  6. Flatten each ball slightly with your fingers or the bottom of a glass.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are firm but the center is still soft.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
