Ingredients

  • Black cod fillets - 2 (approximately 200g each)
  • White miso paste - 3 tablespoons
  • Brown sugar - 2 tablespoons
  • Mirin - 2 tablespoons
  • Soy sauce (kosher) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, finely sliced (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a bowl, mix the white miso paste, brown sugar, mirin, soy sauce, and sesame oil until well combined to create the marinade.
  2. Place the black cod fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for deeper flavor.
  3. Preheat your oven to 200°C (400°F). Line a baking dish with parchment paper.
  4. Remove the black cod from the marinade, allowing the excess to drip off, and place the fillets in the prepared baking dish.
  5. Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Remove from the oven and let rest for 2 minutes. Garnish with sliced green onions and sesame seeds before serving.
