  • Whole wheat tortillas - 2 small
  • Ground turkey - 200 grams
  • Black beans - 100 grams, drained and rinsed
  • Red bell pepper - 50 grams, diced
  • Onion - 30 grams, diced
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Avocado - 1 medium, diced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Greek yogurt - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Use a round cutter to cut the tortillas into circles that fit into a muffin tin, pressing them down to form cups.
  3. Brush the tortilla cups lightly with olive oil and bake in the preheated oven for 10-12 minutes or until golden and crispy.
  4. While the cups are baking, heat olive oil in a skillet over medium heat. Add diced onion and garlic, sautéing until soft.
  5. Add ground turkey to the skillet, cooking until browned. Stir in black beans, diced red bell pepper, cumin, chili powder, and salt. Cook for an additional 5 minutes until heated through.
  6. Once the tortilla cups are done, remove them from the oven and fill each cup with the turkey and bean mixture.
  7. Top each mini taco cup with diced avocado, a squeeze of lime juice, a dollop of Greek yogurt, and a sprinkle of fresh cilantro.
