- Whole wheat tortillas - 2 small
- Ground turkey - 200 grams
- Black beans - 100 grams, drained and rinsed
- Red bell pepper - 50 grams, diced
- Onion - 30 grams, diced
- Garlic - 1 clove, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Avocado - 1 medium, diced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Greek yogurt - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- Use a round cutter to cut the tortillas into circles that fit into a muffin tin, pressing them down to form cups.
- Brush the tortilla cups lightly with olive oil and bake in the preheated oven for 10-12 minutes or until golden and crispy.
- While the cups are baking, heat olive oil in a skillet over medium heat. Add diced onion and garlic, sautéing until soft.
- Add ground turkey to the skillet, cooking until browned. Stir in black beans, diced red bell pepper, cumin, chili powder, and salt. Cook for an additional 5 minutes until heated through.
- Once the tortilla cups are done, remove them from the oven and fill each cup with the turkey and bean mixture.
- Top each mini taco cup with diced avocado, a squeeze of lime juice, a dollop of Greek yogurt, and a sprinkle of fresh cilantro.
