- Eggs - 4 large
- Milk - 60 ml
- Shredded cheddar cheese - 60 g
- Spinach - 30 g, chopped
- Red bell pepper - 30 g, diced
- Onion - 30 g, finely chopped
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pre-made mini pastry shells - 4
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the onion and red bell pepper until soft, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- Stir in the sautéed vegetables and shredded cheddar cheese into the egg mixture.
- Place the pre-made mini pastry shells onto a baking tray and carefully pour the egg mixture into each shell, filling them about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the egg mixture is set and the tops are lightly golden.
- Allow to cool slightly before serving. Enjoy warm or at room temperature.
