Ingredients

  • Eggs - 4 large
  • Milk - 60 ml
  • Shredded cheddar cheese - 60 g
  • Spinach - 30 g, chopped
  • Red bell pepper - 30 g, diced
  • Onion - 30 g, finely chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pre-made mini pastry shells - 4

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and red bell pepper until soft, about 3-4 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  5. Stir in the sautéed vegetables and shredded cheddar cheese into the egg mixture.
  6. Place the pre-made mini pastry shells onto a baking tray and carefully pour the egg mixture into each shell, filling them about 3/4 full.
  7. Bake in the preheated oven for 20-25 minutes, or until the egg mixture is set and the tops are lightly golden.
  8. Allow to cool slightly before serving. Enjoy warm or at room temperature.
