- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 large, diced
- Vegetable broth - 500 ml
- Cooked rice - 200 grams
- Cannellini beans - 100 grams, drained and rinsed
- Italian seasoning - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped
- Parmesan cheese - for serving (optional)
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced zucchini and bell pepper, cooking for an additional 3-4 minutes.
- Incorporate the diced tomato, vegetable broth, and Italian seasoning. Bring to a simmer.
- Once simmering, add the cooked rice and cannellini beans. Stir well to combine.
- Season with salt and black pepper to taste. Allow to simmer for another 5-7 minutes to heat through.
- Remove from heat and stir in the fresh basil just before serving.
- Serve hot, topped with grated Parmesan cheese if desired.
