  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 large, diced
  • Vegetable broth - 500 ml
  • Cooked rice - 200 grams
  • Cannellini beans - 100 grams, drained and rinsed
  • Italian seasoning - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped
  • Parmesan cheese - for serving (optional)

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrot, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced zucchini and bell pepper, cooking for an additional 3-4 minutes.
  5. Incorporate the diced tomato, vegetable broth, and Italian seasoning. Bring to a simmer.
  6. Once simmering, add the cooked rice and cannellini beans. Stir well to combine.
  7. Season with salt and black pepper to taste. Allow to simmer for another 5-7 minutes to heat through.
  8. Remove from heat and stir in the fresh basil just before serving.
  9. Serve hot, topped with grated Parmesan cheese if desired.
