- Black beans - 100 grams, rinsed and drained
- Corn - 50 grams, frozen or fresh
- Avocado - 1 small, diced
- Lime - 1, juiced
- Cilantro - 15 grams, chopped
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Heat olive oil in a skillet over medium heat.
- Add diced red onion and sauté for 2-3 minutes until translucent.
- Stir in diced zucchini and red bell pepper, cooking for another 5 minutes until softened.
