  • Red bell pepper - 50 grams, diced
  • Red onion - 50 grams, diced
  • Black beans - 100 grams, rinsed and drained
  • Corn - 50 grams, frozen or fresh
  • Avocado - 1 small, diced
  • Lime - 1, juiced
  • Cilantro - 15 grams, chopped
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced red onion and sauté for 2-3 minutes until translucent.
  3. Stir in diced zucchini and red bell pepper, cooking for another 5 minutes until softened.
  4. Add black beans and corn to the skillet, followed by cumin, chili powder, salt, and pepper. Stir well and cook for an additional 3-4 minutes, until heated through.
