- Gluten-free tortillas - 2 large
- Cheddar cheese, shredded - 100 grams
- Monterey Jack cheese, shredded - 100 grams
- Red bell pepper, diced - 50 grams
- Green onion, thinly sliced - 30 grams
- Black beans, drained and rinsed - 100 grams
- Olive oil - 1 tablespoon
- Cumin powder - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Sour cream - for serving (optional)
- Salsa - for serving (optional)
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the diced red bell pepper and cook for 2-3 minutes until softened.
- Stir in the black beans, cumin, garlic powder, salt, and pepper, cooking for an additional 2 minutes until heated through.
- Remove the mixture from the skillet and set aside.
- In the same skillet, place one gluten-free tortilla and sprinkle half of the cheddar and Monterey Jack cheese evenly over it.
- Spread half of the vegetable and black bean mixture over the cheese, then top with more cheese before placing the second tortilla on top.
- Cook for 3-4 minutes until the bottom tortilla is golden brown, then carefully flip and cook the other side for another 3-4 minutes until golden and the cheese is melted.
- Remove from the skillet, cut into wedges, and serve with sour cream and salsa if desired.
