Ingredients

  • Gluten-free tortillas - 2 large
  • Cheddar cheese, shredded - 100 grams
  • Monterey Jack cheese, shredded - 100 grams
  • Red bell pepper, diced - 50 grams
  • Green onion, thinly sliced - 30 grams
  • Black beans, drained and rinsed - 100 grams
  • Olive oil - 1 tablespoon
  • Cumin powder - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sour cream - for serving (optional)
  • Salsa - for serving (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced red bell pepper and cook for 2-3 minutes until softened.
  3. Stir in the black beans, cumin, garlic powder, salt, and pepper, cooking for an additional 2 minutes until heated through.
  4. Remove the mixture from the skillet and set aside.
  5. In the same skillet, place one gluten-free tortilla and sprinkle half of the cheddar and Monterey Jack cheese evenly over it.
  6. Spread half of the vegetable and black bean mixture over the cheese, then top with more cheese before placing the second tortilla on top.
  7. Cook for 3-4 minutes until the bottom tortilla is golden brown, then carefully flip and cook the other side for another 3-4 minutes until golden and the cheese is melted.
  8. Remove from the skillet, cut into wedges, and serve with sour cream and salsa if desired.
