Ingredients

  • Gluten-free macaroni - 150 grams
  • Unsalted butter - 30 grams
  • Garlic - 1 clove, minced
  • Gluten-free all-purpose flour - 30 grams
  • Milk - 300 ml
  • Cheddar cheese - 150 grams, grated
  • Mozzarella cheese - 100 grams, grated
  • Parmesan cheese - 30 grams, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/4 teaspoon
  • Gluten-free breadcrumbs - 30 grams
  • Olive oil - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil. Add gluten-free macaroni and cook according to package instructions until al dente. Drain and set aside.
  2. In the same pot, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in the gluten-free all-purpose flour and cook for 1 minute, stirring constantly to form a roux.
  4. Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the mixture thickens, about 5 minutes.
  5. Reduce heat to low and add the cheddar, mozzarella, and half of the Parmesan cheese. Stir until the cheeses are completely melted and the sauce is smooth.
  6. Season the cheese sauce with salt, black pepper, and paprika.
  7. Add the cooked macaroni to the cheese sauce and stir until well combined.
  8. Preheat the oven to 180°C (350°F). Transfer the mac and cheese to a baking dish.
  9. In a small bowl, mix the gluten-free breadcrumbs with olive oil and the remaining Parmesan cheese. Sprinkle the breadcrumb mixture evenly over the mac and cheese.
  10. Bake in the preheated oven for 15-20 minutes, or until the top is golden and crispy.
