- Gluten-free macaroni - 150 grams
- Unsalted butter - 30 grams
- Garlic - 1 clove, minced
- Gluten-free all-purpose flour - 30 grams
- Milk - 300 ml
- Cheddar cheese - 150 grams, grated
- Mozzarella cheese - 100 grams, grated
- Parmesan cheese - 30 grams, grated
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/4 teaspoon
- Gluten-free breadcrumbs - 30 grams
- Olive oil - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil. Add gluten-free macaroni and cook according to package instructions until al dente. Drain and set aside.
- In the same pot, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the gluten-free all-purpose flour and cook for 1 minute, stirring constantly to form a roux.
- Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the mixture thickens, about 5 minutes.
- Reduce heat to low and add the cheddar, mozzarella, and half of the Parmesan cheese. Stir until the cheeses are completely melted and the sauce is smooth.
- Season the cheese sauce with salt, black pepper, and paprika.
- Add the cooked macaroni to the cheese sauce and stir until well combined.
- Preheat the oven to 180°C (350°F). Transfer the mac and cheese to a baking dish.
- In a small bowl, mix the gluten-free breadcrumbs with olive oil and the remaining Parmesan cheese. Sprinkle the breadcrumb mixture evenly over the mac and cheese.
- Bake in the preheated oven for 15-20 minutes, or until the top is golden and crispy.
