Ingredients

  • Gluten-free tortillas - 2 pieces
  • Large eggs - 4 pieces
  • Bacon - 4 strips
  • Avocado - 1 medium, diced
  • Cheddar cheese - 100 grams, shredded
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Salsa - 100 grams, for serving

Steps

  1. In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove and let drain on paper towels.
  2. In the same skillet, add olive oil, and whisk the eggs in a bowl with salt and black pepper. Pour the eggs into the skillet and scramble until just set, about 2-3 minutes.
  3. Warm the gluten-free tortillas in a separate pan or microwave for about 30 seconds until pliable.
  4. Assemble each burrito by placing half of the scrambled eggs, 2 strips of bacon (broken into pieces), diced avocado, shredded cheddar cheese, and chopped cilantro onto each tortilla.
  5. Roll the tortillas tightly into burritos, folding in the sides to secure the filling.
  6. Serve warm with salsa on the side for dipping.
