Ingredients

  • Pork shoulder (or butt) - 500 grams
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Apple cider vinegar - 2 tablespoons
  • Keto-friendly BBQ sauce - 100 grams
  • Water - 0.5 liters

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and black pepper to create a spice rub.
  3. Rub the spice mixture all over the pork shoulder, ensuring it's evenly coated.
  4. In a large oven-safe pot, heat olive oil over medium heat. Sear the pork shoulder on all sides until browned, about 3-4 minutes per side.
  5. Remove the pork from the pot and set aside. Pour in the apple cider vinegar and scrape the bottom of the pot to deglaze.
  6. Return the pork to the pot, add water, and cover with a lid.
  7. Transfer the pot to the preheated oven and cook for 4-5 hours, or until the pork is fork-tender.
  8. Once cooked, remove the pork from the pot and let it rest for 10 minutes before shredding with two forks.
  9. Mix the shredded pork with keto-friendly BBQ sauce before serving.
