- Pork shoulder (or butt) - 500 grams
- Olive oil - 2 tablespoons
- Smoked paprika - 1 tablespoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Apple cider vinegar - 2 tablespoons
- Keto-friendly BBQ sauce - 100 grams
- Water - 0.5 liters
Steps
- Preheat your oven to 150°C (300°F).
- In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and black pepper to create a spice rub.
- Rub the spice mixture all over the pork shoulder, ensuring it's evenly coated.
- In a large oven-safe pot, heat olive oil over medium heat. Sear the pork shoulder on all sides until browned, about 3-4 minutes per side.
- Remove the pork from the pot and set aside. Pour in the apple cider vinegar and scrape the bottom of the pot to deglaze.
- Return the pork to the pot, add water, and cover with a lid.
- Transfer the pot to the preheated oven and cook for 4-5 hours, or until the pork is fork-tender.
- Once cooked, remove the pork from the pot and let it rest for 10 minutes before shredding with two forks.
- Mix the shredded pork with keto-friendly BBQ sauce before serving.
