Ingredients

  • Pork baby back ribs - 500 grams
  • Paprika - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Dijon mustard - 1 tablespoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your grill to medium heat (about 180-200°C).
  2. In a small bowl, mix together the paprika, brown sugar, garlic powder, onion powder, black pepper, cayenne pepper, and salt to create the dry rub.
  3. Remove the membrane from the back of the ribs if it's still attached for better flavor absorption.
  4. Rub the Dijon mustard evenly over both sides of the ribs to help the spice mix adhere.
  5. Generously apply the dry rub to both sides of the ribs, pressing it into the meat.
  6. Lightly brush the ribs with olive oil to keep them moist during cooking.
  7. Place the ribs on the grill, bone side down, and cook for about 2 hours, flipping every 30 minutes until the meat is tender and the internal temperature reaches 70°C.
  8. Remove the ribs from the grill and let them rest for 10 minutes before slicing.
