Ingredients

  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1 small, thinly sliced
  • Bell pepper (any color) - 1 medium, diced
  • Kalamata olives - 100 grams, pitted and halved
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 15 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash and prepare all the vegetables: dice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and dice the bell pepper.
  2. In a large mixing bowl, combine the diced cucumber, cherry tomatoes, red onion, and bell pepper.
  3. Add the Kalamata olives and crumbled feta cheese to the bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper to create the dressing.
