Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups

  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4, finely chopped
  • Kalamata olives - 1/3 cup, pitted and sliced
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
