Ingredients
- Basmati rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1 small, diced
- Bell pepper - 1 medium, diced
- Cherry tomatoes - 1 cup, halved
- Kalamata olives - 1/4 cup, pitted and sliced
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice, 1/2 teaspoon of salt, and a drizzle of olive oil. Stir, cover, and reduce the heat to low. Cook for 15 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and diced red onion, sautéing for 2-3 minutes until the onion becomes translucent.
- Add the diced bell pepper to the skillet and cook for an additional 3-4 minutes until softened.
- Stir in the halved cherry tomatoes and sliced Kalamata olives, cooking for another 2-3 minutes until the tomatoes start to soften.
- Once the rice is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine.
- Remove the skillet from the heat and stir in the crumbled feta cheese, chopped parsley, and lemon juice. Season with black pepper to taste.
- Serve warm, garnished with additional parsley and a drizzle of olive oil if desired.
