Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, diced
  • Bell pepper - 1 medium, diced
  • Cherry tomatoes - 1 cup, halved
  • Kalamata olives - 1/4 cup, pitted and sliced
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice, 1/2 teaspoon of salt, and a drizzle of olive oil. Stir, cover, and reduce the heat to low. Cook for 15 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and diced red onion, sautéing for 2-3 minutes until the onion becomes translucent.
  4. Add the diced bell pepper to the skillet and cook for an additional 3-4 minutes until softened.
  5. Stir in the halved cherry tomatoes and sliced Kalamata olives, cooking for another 2-3 minutes until the tomatoes start to soften.
  6. Once the rice is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine.
  7. Remove the skillet from the heat and stir in the crumbled feta cheese, chopped parsley, and lemon juice. Season with black pepper to taste.
  8. Serve warm, garnished with additional parsley and a drizzle of olive oil if desired.
