- Pita chips - 100 grams

- Red onion - 30 grams, finely chopped
- Kalamata olives - 30 grams, sliced
- Fresh parsley - 10 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sumac - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Spread the pita chips on a baking sheet and bake for 5-7 minutes until they are crispy.
- In a bowl, combine the cooked chickpeas, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and sumac.
- Pour the dressing over the salad mixture and toss to combine.
- Once the pita chips are done, remove them from the oven and place them on a serving platter.
- Top the pita chips with the chickpea salad mixture and sprinkle crumbled feta cheese and chopped parsley on top.
- Serve immediately while the chips are warm.
