  • Pita chips - 100 grams
  • Chickpeas - 100 grams, cooked and drained
  • Feta cheese - 50 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 50 grams, diced
  • Red onion - 30 grams, finely chopped
  • Kalamata olives - 30 grams, sliced
  • Fresh parsley - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sumac - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Spread the pita chips on a baking sheet and bake for 5-7 minutes until they are crispy.
  3. In a bowl, combine the cooked chickpeas, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and sumac.
  5. Pour the dressing over the salad mixture and toss to combine.
  6. Once the pita chips are done, remove them from the oven and place them on a serving platter.
  7. Top the pita chips with the chickpea salad mixture and sprinkle crumbled feta cheese and chopped parsley on top.
  8. Serve immediately while the chips are warm.
