  • Bell peppers - 1 medium, cubed
  • Red onion - 1 small, cubed
  • Zucchini - 1 small, sliced into rounds
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper to create the marinade.
  2. Add the cubed chicken breast to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes to allow flavors to meld.
  3. While the chicken is marinating, prepare the vegetables by cutting the bell pepper, red onion, and zucchini into appropriate sizes for skewering.
