- Red onion - 1 small, cubed
- Zucchini - 1 small, sliced into rounds
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper to create the marinade.
- Add the cubed chicken breast to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes to allow flavors to meld.
- While the chicken is marinating, prepare the vegetables by cutting the bell pepper, red onion, and zucchini into appropriate sizes for skewering.
