  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Marinara sauce - 100 grams (sugar-free if desired)
  • Bell peppers - 2 large (any color)
  • Shredded mozzarella cheese - 50 grams
  • Olive oil - 1 tablespoon
  • Fresh basil - for garnish (optional)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a mixing bowl, combine the ground beef, almond flour, egg, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until well combined.
  3. Shape the mixture into 4-6 small meatballs, about 3 cm in diameter.
  4. Heat the olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
  5. Once browned, pour the marinara sauce over the meatballs and simmer for an additional 5 minutes.
  6. Meanwhile, slice the bell peppers in half lengthwise and remove the seeds.
  7. Place the bell pepper halves in a baking dish and fill each half with the meatballs and sauce mixture.
  8. Top each stuffed pepper with shredded mozzarella cheese.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
  10. Remove the foil and bake for an additional 5 minutes until the cheese is melted and bubbly.
  11. Garnish with fresh basil, if desired, and serve immediately.
