Ingredients

  • Zucchini - 2 medium
  • Cacao powder - 2 tablespoons
  • Almond flour - 1/2 cup
  • Eggs - 2 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Avocado - 1 small, diced

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles and set aside.
  2. In a mixing bowl, combine almond flour, cacao powder, eggs, olive oil, salt, and black pepper. Mix until a smooth dough forms.
  3. On a floured surface, roll out the dough into a thin sheet and cut into pasta shapes (fettuccine or tagliatelle).
  4. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant, about 1 minute.
  5. Add cherry tomatoes to the skillet, cooking for about 5 minutes until softened.
  6. Drop the pasta into boiling water and cook for 2-3 minutes until al dente. Drain and add to the skillet with tomatoes.
  7. Toss the pasta with the garlic and tomatoes, adding chopped basil and diced avocado before serving.
  8. Plate the pasta, garnishing with additional basil if desired.
