Steps
- Break the matzo sheets into small pieces and place them in a bowl.
- Pour hot water over the matzo pieces and let them soak for about 3 minutes, then drain excess water.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper (and sugar and cinnamon if making the sweet version).
- Add the soaked matzo to the egg mixture and stir until well combined.
- Heat the butter in a non-stick skillet over medium heat until melted.
- Pour the matzo mixture into the skillet, spreading it evenly.
- Cook for about 3-4 minutes until the bottom is golden brown, then flip and cook the other side for another 3-4 minutes until set and golden.
