Steps

  1. In a mixing bowl, combine matzo meal, eggs, vegetable oil, water, salt, and black pepper. Mix until well combined and refrigerate for 30 minutes.
  2. In a large pot, bring chicken broth to a gentle boil. Add sliced carrots and celery, and simmer for 10 minutes until vegetables are tender.
  3. While the broth is simmering, wet your hands and form the matzo mixture into balls about the size of a golf ball.
  4. Carefully drop the matzo balls into the simmering broth. Cover the pot and cook for an additional 20 minutes, allowing the matzo balls to cook through and expand.
  5. Once cooked, remove from heat and stir in fresh dill and parsley. Serve hot, garnished with extra herbs if desired.
