Ingredients
- Matzo Meal - 1/2 cup
- Eggs - 2 large
- Vegetable Oil - 2 tablespoons
- Water - 1/4 cup
- Salt - 1/2 teaspoon
- Ground Black Pepper - 1/4 teaspoon
- Chicken Broth - 4 cups (preferably low sodium)
- Carrot - 1 medium, sliced
- Celery - 1 stalk, sliced
- Fresh Dill - 2 tablespoons, chopped
- Parsley - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine matzo meal, eggs, vegetable oil, water, salt, and black pepper. Mix until well combined and refrigerate for 30 minutes.
- In a large pot, bring chicken broth to a gentle boil. Add sliced carrots and celery, and simmer for 10 minutes until vegetables are tender.
- While the broth is simmering, wet your hands and form the matzo mixture into balls about the size of a golf ball.
- Carefully drop the matzo balls into the simmering broth. Cover the pot and cook for an additional 20 minutes, allowing the matzo balls to cook through and expand.
- Once cooked, remove from heat and stir in fresh dill and parsley. Serve hot, garnished with extra herbs if desired.
