Ingredients

  • Long grain white rice - 1 cup
  • Vegetable broth - 2 cups
  • Matzah meal - 1/2 cup
  • Egg - 1 large
  • Water - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh dill - 1 tablespoon, chopped
  • Carrots - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1/2 small, diced

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil over medium heat.
  2. Add the rice to the boiling broth, reduce the heat to low, cover, and let it simmer for about 18 minutes or until the rice is tender and the liquid is absorbed.
  3. While the rice cooks, prepare the matzah balls. In a bowl, combine the matzah meal, egg, water, olive oil, salt, and black pepper. Mix well and allow to sit for about 15 minutes.
  4. Once the rice is cooked, remove it from heat and fluff it with a fork. Stir in the diced carrots, celery, and onion, and let it sit covered for an additional 5 minutes to soften the vegetables.
  5. Meanwhile, bring a separate pot of water to a gentle simmer. Wet your hands and form the matzah mixture into small balls, about the size of a golf ball.
  6. Carefully drop the matzah balls into the simmering water. Cover the pot and cook for about 20 minutes, until the matzah balls are cooked through and float to the top.
  7. Once the matzah balls are ready, serve them over the rice mixture, garnished with fresh dill.
