Ingredients

  • Jasmine rice - 1 cup
  • Water - 2 cups
  • Matzah meal - 1/2 cup
  • Egg - 1 large
  • Vegetable oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced

Steps

  1. In a medium saucepan, bring 2 cups of water to a boil. Add the jasmine rice, reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
  2. In a large bowl, combine the matzah meal, egg, vegetable oil, salt, and pepper. Mix well to form a dough.
  3. In a skillet, heat a tablespoon of oil over medium heat and sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
  4. Add the sautéed onion and garlic to the matzah mixture, along with the chopped parsley. Mix until combined.
  5. With wet hands, form small balls (about 1 inch in diameter) from the matzah mixture.
  6. In a large pot of boiling salted water, gently drop in the matzah balls. Reduce heat to low, cover, and simmer for 20 minutes until they are cooked through.
  7. Serve the rice on plates, topped with the matzah balls, and garnish with additional parsley if desired.
