- Almond flour - 1 1/2 cups
- Egg - 1 large
- Mozzarella cheese (shredded) - 1 cup
- Cream cheese - 2 oz
- Baking powder - 1 tsp
- Olive oil - 2 tbsp
- Fresh tomatoes (sliced) - 1 medium
- Fresh basil leaves - 10-12 leaves
- Salt - 1/2 tsp
- Pepper - 1/4 tsp
- Parmesan cheese (grated) - 1/4 cup
Steps
- Preheat the oven to 200°C (400°F).
- In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Heat for about 30 seconds, then stir until smooth and combined.
- In a mixing bowl, combine the almond flour, baking powder, salt, and pepper. Add the egg and the melted cheese mixture. Mix well until a dough forms.
- Line a baking sheet with parchment paper and spread the dough into a round pizza shape, about 1/2 inch thick.
- Drizzle olive oil on top of the crust and bake in the preheated oven for 10-12 minutes until golden brown.
- Remove the crust from the oven and layer the sliced tomatoes evenly on top.
- Sprinkle the grated Parmesan cheese over the tomatoes, followed by the fresh basil leaves.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
- Remove from the oven, let cool for a couple of minutes, slice, and serve warm.
