Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Parmesan cheese (grated) - 50 grams
  • Egg - 1 large
  • Almond flour - 30 grams
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce (sugar-free) - 100 grams
  • Fresh basil leaves - 10 grams
  • Fresh mozzarella (sliced) - 100 grams

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Chop the cauliflower into florets and steam until tender, about 8-10 minutes. Drain well and let cool.
  3. In a food processor, pulse the cooked cauliflower until it resembles rice. Squeeze out excess moisture using a clean kitchen towel.
  4. In a mixing bowl, combine the cauliflower, 100 grams shredded mozzarella, Parmesan cheese, egg, almond flour, garlic powder, oregano, salt, and pepper. Mix until a dough forms.
  5. Line a baking sheet with parchment paper and spread the cauliflower dough into a round pizza shape, about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes or until golden brown and firm.
  7. Remove the crust from the oven and spread the tomato sauce evenly over the surface.
  8. Top with slices of fresh mozzarella and sprinkle the remaining shredded mozzarella on top.
  9. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  10. Remove from the oven, garnish with fresh basil leaves, drizzle with olive oil, and slice. Serve hot.
