  • Vanilla extract - 1/2 teaspoon

Steps

  1. Prepare a baking sheet by lining it with parchment paper.
  2. In a medium saucepan, combine the pure maple syrup and sea salt.
  3. Heat the mixture over medium heat, stirring occasionally until it reaches a boil.
  4. Continue boiling without stirring until the syrup reaches the soft-ball stage (235°F to 240°F or 112°C to 115°C), about 10-15 minutes.
  5. Remove the saucepan from heat and let it sit for a minute to cool slightly.
  6. Add the vanilla extract to the syrup and stir gently.
  7. Using a wooden spoon, begin to stir the syrup vigorously until it thickens and starts to lose its gloss, about 5-7 minutes.
  8. Quickly pour the mixture onto the prepared baking sheet and spread it out evenly.
  9. Let it cool completely at room temperature until firm, then break into pieces.
