  • Maple sap - 500 ml

  • Celery - 1 stalk, diced
  • Onion - 1 small, diced
  • Mushrooms (shiitake or cremini) - 100 grams, sliced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrot, and celery to the pot, and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and sliced mushrooms, cooking for an additional 3-4 minutes until the mushrooms are tender.
  4. Pour in the maple sap and bone broth, and add the fresh thyme, salt, and black pepper.
