Ingredients

  • Pork loin - 400 grams
  • Maple syrup - 2 tablespoons
  • Dijon mustard - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh rosemary - 1 teaspoon, chopped

Steps

  1. In a bowl, combine maple syrup, Dijon mustard, apple cider vinegar, minced garlic, olive oil, salt, black pepper, and chopped rosemary to create the marinade.
  2. Place the pork loin in a resealable plastic bag or shallow dish and pour the marinade over the meat, ensuring it is well coated. Seal or cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the pork loin from the marinade, allowing excess marinade to drip off, and discard the remaining marinade.
  5. Grill the pork loin for 20-25 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).
  6. Once cooked, remove from the grill and let it rest for 5 minutes before slicing.
  7. Serve the sliced pork with your choice of Paleo-friendly sides.
