  • Butternut squash - 400 grams
  • Olive oil - 2 tablespoons
  • Pure maple syrup - 2 tablespoons
  • Ground cinnamon - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped pecans - 30 grams
  • Fresh parsley - 1 tablespoon (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and seed the butternut squash, then cut it into 1-inch cubes.
  3. In a large bowl, toss the squash cubes with olive oil, maple syrup, ground cinnamon, salt, and black pepper until well coated.
  4. Spread the seasoned squash evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 20-25 minutes, or until the squash is tender and caramelized, stirring halfway through for even cooking.
