Ingredients

  • Pork belly - 500 grams
  • Maple syrup - 60 ml
  • Soy sauce (Halal) - 30 ml
  • Apple cider vinegar - 15 ml
  • Garlic cloves, minced - 2
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Green onions, sliced - 2 for garnish

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a bowl, mix together the maple syrup, soy sauce, apple cider vinegar, minced garlic, black pepper, salt, ground ginger, and red pepper flakes to create the glaze.
  3. Score the skin of the pork belly in a diamond pattern, being careful not to cut too deep into the meat.
  4. Place the pork belly in a roasting pan and pour half of the glaze over it, ensuring it is evenly coated.
  5. Cover the pan with aluminum foil and place it in the preheated oven. Roast for 2 hours.
  6. After 2 hours, remove the foil and brush the pork belly with the remaining glaze. Increase the oven temperature to 200°C (400°F) and roast for an additional 30 minutes, or until the skin is crispy and caramelized.
  7. Remove from the oven and let it rest for 10 minutes before slicing.
  8. Serve the sliced pork belly garnished with sliced green onions.
