Ingredients

  • Duck breasts - 2 pieces (approximately 200g each)
  • Pure maple syrup - 4 tablespoons (60ml)
  • Fresh rosemary - 1 tablespoon, chopped
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat.
  3. Season the duck breasts with salt and black pepper on both sides.
  4. In a small bowl, mix together the maple syrup, chopped rosemary, minced garlic, and lemon juice.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat.
  6. Place the duck breasts skin-side down in the skillet and sear for about 6-8 minutes until the skin is crispy and golden brown.
  7. Flip the duck breasts over and pour the maple syrup mixture over them.
  8. Transfer the skillet to the preheated oven and roast for an additional 10-12 minutes for medium-rare doneness.
  9. Remove the skillet from the oven and let the duck rest for 5 minutes before slicing.
  10. Serve the sliced duck with the maple glaze drizzled over the top.
