Ingredients

  • Acorn squash - 1 medium (about 450g)
  • Olive oil - 1 tablespoon (15ml)
  • Pure maple syrup - 2 tablespoons (30ml)
  • Cinnamon - 1/2 teaspoon (2g)
  • Salt - 1/4 teaspoon (1.5g)
  • Black pepper - 1/4 teaspoon (1g)
  • Chopped pecans - 2 tablespoons (15g)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds.
  3. Brush the cut sides of the squash with olive oil and season with salt and black pepper.
  4. Place the squash halves cut-side down on a baking sheet lined with parchment paper.
  5. Roast in the oven for 25-30 minutes, or until the squash is tender and easily pierced with a fork.
  6. In a small bowl, mix together the maple syrup and cinnamon.
  7. Remove the squash from the oven, turn them cut-side up, and drizzle the maple mixture over the flesh.
  8. Sprinkle chopped pecans on top of the glazed squash.
  9. Return to the oven and roast for an additional 5-7 minutes until the glaze is bubbly and the pecans are slightly toasted.
