Ingredients
- Acorn squash - 1 medium (about 450g)
- Olive oil - 1 tablespoon (15ml)
- Pure maple syrup - 2 tablespoons (30ml)
- Cinnamon - 1/2 teaspoon (2g)
- Salt - 1/4 teaspoon (1.5g)
- Black pepper - 1/4 teaspoon (1g)
- Chopped pecans - 2 tablespoons (15g)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the acorn squash in half lengthwise and scoop out the seeds.
- Brush the cut sides of the squash with olive oil and season with salt and black pepper.
- Place the squash halves cut-side down on a baking sheet lined with parchment paper.
- Roast in the oven for 25-30 minutes, or until the squash is tender and easily pierced with a fork.
- In a small bowl, mix together the maple syrup and cinnamon.
- Remove the squash from the oven, turn them cut-side up, and drizzle the maple mixture over the flesh.
- Sprinkle chopped pecans on top of the glazed squash.
- Return to the oven and roast for an additional 5-7 minutes until the glaze is bubbly and the pecans are slightly toasted.
