Ingredients

  • Pork ribs - 1 kg
  • Maple syrup - 100 ml
  • Bourbon (kosher) - 50 ml
  • Apple cider vinegar - 30 ml
  • Soy sauce (kosher) - 30 ml
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Water - 250 ml

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a bowl, mix together the maple syrup, bourbon, apple cider vinegar, soy sauce, garlic powder, onion powder, smoked paprika, black pepper, and salt to create the marinade.
  3. Place the pork ribs in a large dish and pour the marinade over them, ensuring they are well coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
  4. After marinating, remove the ribs from the refrigerator and allow them to come to room temperature for about 30 minutes.
  5. Place the ribs on a baking sheet lined with aluminum foil. Pour the water into the baking sheet to create steam while cooking.
  6. Cover the ribs tightly with another layer of aluminum foil and bake in the preheated oven for 2.5 hours.
  7. After 2.5 hours, remove the ribs from the oven and carefully take off the top layer of foil.
  8. Preheat a grill or broiler to high heat. Transfer the ribs to the grill or broiler and cook for an additional 10-15 minutes, basting with leftover marinade, until they are caramelized and slightly charred.
  9. Remove from the grill, let rest for a few minutes, then slice between the bones and serve warm.
