Ingredients

  • Quinoa - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Bacon - 4 slices (about 100g)
  • Maple syrup - 2 tablespoons (30ml)
  • Chopped pecans - 1/4 cup (30g)
  • Green onions - 2 tablespoons, chopped
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove any bitterness, then drain.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed.
  4. While the quinoa is cooking, place the bacon strips in a skillet over medium heat. Cook until crispy, about 5-7 minutes, flipping halfway through.
  5. Remove the bacon from the skillet and place it on a paper towel to drain excess fat. Once cooled, chop the bacon into small pieces.
  6. In a large bowl, combine the cooked quinoa, chopped bacon, maple syrup, chopped pecans, green onions, salt, and black pepper. Mix well.
  7. Serve warm, drizzled with extra maple syrup if desired.
