- Quinoa - 1 cup (200g)
- Water - 2 cups (500ml)
- Bacon - 4 slices (about 100g)
- Maple syrup - 2 tablespoons (30ml)
- Chopped pecans - 1/4 cup (30g)
- Green onions - 2 tablespoons, chopped
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the quinoa under cold water to remove any bitterness, then drain.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed.
- While the quinoa is cooking, place the bacon strips in a skillet over medium heat. Cook until crispy, about 5-7 minutes, flipping halfway through.
- Remove the bacon from the skillet and place it on a paper towel to drain excess fat. Once cooled, chop the bacon into small pieces.
- In a large bowl, combine the cooked quinoa, chopped bacon, maple syrup, chopped pecans, green onions, salt, and black pepper. Mix well.
- Serve warm, drizzled with extra maple syrup if desired.
