- Granulated sugar - 2 tablespoons (30g)
- Fresh lime juice - 1 tablespoon (15ml)
- Heavy cream - 1 cup (240ml)
- Gelatin powder - 1 teaspoon (3g)
- Water - 2 tablespoons (30ml)
- Vanilla extract - 1/2 teaspoon (2.5ml)
Steps
- Peel and dice the ripe mango, then blend it in a blender until smooth. Set aside.
- In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
- Once bloomed, heat the gelatin mixture in the microwave for about 10-15 seconds until dissolved, then stir it into the blended mango along with the lime juice and sugar. Mix well.
- In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the mango mixture until well combined and smooth.
- Divide the mango mousse into serving glasses and refrigerate for at least 2 hours or until set.
- Serve chilled, garnished with fresh mango slices or mint leaves if desired.
