Ingredients

  • Ripe mango - 1 medium (about 200g)
  • Granulated sugar - 2 tablespoons (30g)
  • Fresh lime juice - 1 tablespoon (15ml)
  • Heavy cream - 1 cup (240ml)
  • Gelatin powder - 1 teaspoon (3g)
  • Water - 2 tablespoons (30ml)
  • Vanilla extract - 1/2 teaspoon (2.5ml)

Steps

  1. Peel and dice the ripe mango, then blend it in a blender until smooth. Set aside.
  2. In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
  3. Once bloomed, heat the gelatin mixture in the microwave for about 10-15 seconds until dissolved, then stir it into the blended mango along with the lime juice and sugar. Mix well.
  4. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
  5. Gently fold the whipped cream into the mango mixture until well combined and smooth.
  6. Divide the mango mousse into serving glasses and refrigerate for at least 2 hours or until set.
  7. Serve chilled, garnished with fresh mango slices or mint leaves if desired.
