Ingredients

  • 200g boneless, skinless chicken breast - 1
  • 1 ripe mango - 1
  • 100g mixed salad greens - 2 cups
  • 50g cherry tomatoes - 1 cup, halved
  • 50g cucumber - 1/2, diced
  • 30g red onion - 1/4, thinly sliced
  • 30ml olive oil - 2 tablespoons
  • 15ml apple cider vinegar - 1 tablespoon
  • 1 teaspoon honey - 5g
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat a grill or skillet over medium heat.
  2. Season the chicken breast with salt and pepper.
  3. Cook the chicken for about 6-7 minutes per side, or until fully cooked through (internal temperature should reach 75°C).
  4. Remove the chicken from the heat and let it rest for 5 minutes before slicing it into strips.
  5. While the chicken is resting, peel and dice the mango.
  6. In a large bowl, combine the mixed salad greens, diced mango, halved cherry tomatoes, diced cucumber, and sliced red onion.
  7. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, and a pinch of salt and pepper.
  8. Drizzle the dressing over the salad and toss gently to combine.
  9. Top the salad with the sliced chicken and garnish with fresh cilantro.
