Ingredients

  • Vanilla extract - 1 teaspoon (5ml)
  • Almond extract - 1/2 teaspoon (2.5ml)
  • Slivered almonds - 1/2 cup (75g)
  • Chocolate chips - 1/4 cup (45g)

Steps

  1. Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the eggs, vanilla extract, and almond extract until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring until a dough forms.
  5. Fold in the slivered almonds and chocolate chips until evenly distributed.
  6. Divide the dough in half and shape each half into a log about 2.5 cm (1 inch) thick and 20 cm (8 inches) long on the prepared baking sheet, leaving space between the logs.
  7. Bake in the preheated oven for 25 minutes or until golden brown.
  8. Remove from the oven and let the logs cool for 10 minutes before slicing them diagonally into 1.5 cm (0.5 inch) thick pieces.
  9. Place the sliced cookies back on the baking sheet, cut side down, and bake for an additional 10 minutes until crisp.
  10. Allow the cookies to cool completely on a wire rack before serving.
