- Eggs - 2 large
- Vanilla extract - 1 teaspoon (5ml)
- Almond extract - 1/2 teaspoon (2.5ml)
- Slivered almonds - 1/2 cup (75g)
- Chocolate chips - 1/4 cup (45g)
Steps
- Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the eggs, vanilla extract, and almond extract until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring until a dough forms.
- Fold in the slivered almonds and chocolate chips until evenly distributed.
- Divide the dough in half and shape each half into a log about 2.5 cm (1 inch) thick and 20 cm (8 inches) long on the prepared baking sheet, leaving space between the logs.
- Bake in the preheated oven for 25 minutes or until golden brown.
- Remove from the oven and let the logs cool for 10 minutes before slicing them diagonally into 1.5 cm (0.5 inch) thick pieces.
- Place the sliced cookies back on the baking sheet, cut side down, and bake for an additional 10 minutes until crisp.
- Allow the cookies to cool completely on a wire rack before serving.
